The Art of Rigor: In the Footsteps of Marchesi, Sartini, and Lopriore THE CHEF
Chef
Chef Michele Ricci's vocation was born within the walls of his home, inspired by the skilled gestures of his mother and grandmother, and then forged in the rigor of international haute cuisine. His career has been one of continuous evolution, seeing him grow in the shadow of the great names of world gastronomy: a legacy of excellence matured under the guidance of absolute masters such as Gualtiero Marchesi, Luigi Sartini, and Paolo Lopriore.
From these experiences in the Olympus of Michelin-starred restaurants, the chef learned the value of technical precision and the ability to transform raw ingredients into art. His knowledge was further enriched through travels to distant and unspoiled lands, where he discovered culinary philosophies and ancestral techniques that he now integrates into his contemporary vision.
Describing himself as a "culinary artisan," the chef now offers a gastronomic narrative based on balance and purity. His philosophy eschews amazement for its own sake in favor of authentic depth: each dish is a perfect synthesis of the rigor of Michelin-starred training, sacred respect for seasonality, and a deep desire to narrate the soul of Tuscany through a noble and innovative language.
