There are places where the silence of history meets the dynamism of the present. "Gli Affreschi" restaurant is the beating heart of the Monastery of Cortona, a gastronomic haven that owes its name to the precious decorations that re-emerged during the restoration of the ancient walls. Dining here means sitting among traces of ancient art which, according to scholars, evoke echoes of the Battle of Montaperti in 1260, in a rarefied atmosphere where every architectural detail seems to whisper a medieval secret.

In this magical setting, Chef Ricci's cuisine strips away the superfluous to become essential, technical and deeply refined.
It is a constant dialogue between the memory of the territory and a contemporary sensibility that knows how to be daring, while always respecting the raw ingredients.

The heart of the menu pulsates with the most authentic flavours of nature in the region, where game is reinterpreted with unexpected lightness: tradition evolves into dishes that are small masterpieces of balance, such as chicken liver pâté refreshed with Cortona Vermouth or low-temperature roe deer made vibrant by marinated turnips.

Chef Ricci's research pushes towards bold combinations that challenge the senses, such as in the 40-yolk bottoni, where pheasant meets the savoury flavour of sea urchins and the balsamic touch of liquorice.

It is a symphony of roots and seasons that finds its maximum intensity in the Piccione al rabarbaro (pigeon with rhubarb) and Filetto di cervo al Gin Sabatini (venison fillet with Sabatini gin), tales of a true Tuscany that start from the walls of the monastery and arrive at a gastronomic vision capable of thrilling with every taste.
