The heart of the menu pulsates with the most authentic flavours of nature in the region, where game is reinterpreted with unexpected lightness: tradition evolves into dishes that are small masterpieces of balance, such as chicken liver pâté refreshed with Cortona Vermouth or low-temperature roe deer made vibrant by marinated turnips.
Chef Ricci's research pushes towards bold combinations that challenge the senses, such as in the 40-yolk bottoni, where pheasant meets the savoury flavour of sea urchins and the balsamic touch of liquorice.
