"Gli Affreschi" restaurant, home to centuries-old frescoes, some of which experts believe depict scenes from the Battle of Montaperti in 1260, is a sanctuary of taste where Chef Ricci celebrates Tuscan cuisine with flair and sophistication.
The tasting menus, an ode to the region's rich terroir, are complemented by the innovative "ingredient of the month," a 2025 novelty that unveils surprising and daring creations.
Chef's signature dishes, though seasonally nuanced, remain pillars of the menu: the pappa al pomodoro, chicken liver pâté with green apple, Cortona Vermouth gel, and savory cantuccio; hand-pulled pici with cacio e pepe on a Cortona saffron velouté; and the beef sirloin with potato millefeuille and herb ash, to name a few.
Great care is dedicated to the vegetable element, which often takes center stage: garden vegetables are artfully presented, playing with textures and colors. Indeed, vegetables inspire the restaurant's monthly ingredient menu, where an entire tasting journey is crafted around a single seasonal highlight.
